Havelock Island is one of the most breathtakingly wonderful places I’ve ever been and in a place where mangoes hang ripe and tantalizingly fragrant from the trees, the particular taste of sunshine happiness is, for me, now perfectly captured in a mango lassi.
4 medium-sized ripe mangoes, peeled and chopped into chunks
474 ml full fat, plain yoghurt
4 tsp. honey (depending on taste/ripeness of mangoes)
Mint leaves to garnish
In a blender, blend the mangoes and yoghurt until smooth.
Taste and decide whether honey is necessary. Blend in the honey.
Pour mixture into four tall glasses and chill until very, very cold.
Garnish with mint.
