Bolivian Recipe for Llajhua – a very spicy sauce!

A little bowl of this incredibly spicy sauce sat on every single Bolivian dinner table we sat at.


8 ripe medium tomatoes, peeled, deseeded, chopped
4 red chili peppers, deseeded
3 green chili peppers, deseeded
1 spoon white onion, finely chopped
1 teaspoon salt


1.  Set juice from tomatoes to one side.

2.  In a food processor, blend peppers, the onion and tomatoes into a fine paste.

3.  Add salt. Blend again.

4.  Serve.
